Baked Cheesecake

Ingredients

  • 1 packet milk arrowroot biscuits

  • 150g margarine

  • 500g cream cheese

  • 3/4 cup caster sugar

  • some lemon rind

  • 3 eggs

  • 1/4 cup lemon juice

Directions

  • Preheat oven to 160 degrees and grease round spring-form pan

  • Blend milk arrowroot biscuits

  • Add margarine and refrigerate for 15mins

  • Beat cream cheese, caster sugar, and lemon rind together.

  • Add eggs one at a time until combined.

  • Add lemon juice and beat for another minute

  • Pour mixture over biscuit base and bake for 50 mins or until filling has set.

  • Allow to cool in oven, and then refrigerate for 4 hours before eating
