Carrot Cake
Ingredients
1 cup walnuts
2 cup plain four
2 tsp baking powder
some salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1 1/4 cups olive oil
1/2 caster sugar
1/2 cup brown sugar
2 tsp vanilla extract
4 eggs
125g cream cheese
3 carrots
1 cup icing sugar
1/2 tsp vanilla extract
Directions
Preheat oven to 170 degrees. Grease springform round cake tin
Lightly toast finely chopped walnuts in oven for 5 mins
Place plain four, baking powder, salt, cinnamon, nutmeg, and ginger in bowl and combine.
Whisk together in a separate bowl cups olive oil, caster sugar, cup brown sugar, vanilla extract, and eggs.
Mix in wet ingredients and cream cheese.
Fold in finely grated carrots and walnuts.
Transfer batter to cake tin and bake for 30 mins.
To make icing, beat cream cheese, icing sugar and vanilla extract together.
Transfer icing to cake, top with walnuts.
