Indian Shepherd's Pie

Ingredients

  • 500g lamb mince

  • 2 onions

  • 1 eggplant

  • 2 cloves garlic

  • 1/3 cup vindaloo or rogan josh paste

  • 400g diced tomatoes

  • 1/3 cup tomato sauce

  • 2/3 cup water

  • 1kg potatoes

  • 1/2 cup milk

  • 75g margarine

Directions

  • Preheat oven to 200 degrees and grease casserole dish

  • Cook lamb mince until browned and remove

  • Saute onions, eggplant, garlic and cook until soft

  • Stir in vindaloo or rogan josh paste

  • Add cooked lamb and diced tomatoes, tomato sauce and water .

  • Bring to boil, cover with a lid and leave to simmer for 10 mins.

  • Make mash potatoes with potatoes, milk and margarine.

  • Transfer to casserole dish, spoon mash on top of lamb. Sprinkle with cheese.

  • Cook in oven for 35 mins
