Indian Shepherd's Pie
Ingredients
500g lamb mince
2 onions
1 eggplant
2 cloves garlic
1/3 cup vindaloo or rogan josh paste
400g diced tomatoes
1/3 cup tomato sauce
2/3 cup water
1kg potatoes
1/2 cup milk
75g margarine
Directions
Preheat oven to 200 degrees and grease casserole dish
Cook lamb mince until browned and remove
Saute onions, eggplant, garlic and cook until soft
Stir in vindaloo or rogan josh paste
Add cooked lamb and diced tomatoes, tomato sauce and water .
Bring to boil, cover with a lid and leave to simmer for 10 mins.
Make mash potatoes with potatoes, milk and margarine.
Transfer to casserole dish, spoon mash on top of lamb. Sprinkle with cheese.
Cook in oven for 35 mins
