Instant Pot Basic Risotto

Ingredients

  • some roast vegetables

  • some olive oil

  • some margarine

  • 1 clove onion and @garlic

  • 1 cup brown rice

  • 2 cups arborio rice

  • 1/2 cup white wine

  • 4 cups vegetable stock

  • 1/2 cup parmesan cheese

  • 1/2 cup frozen peas

  • 1 tbsp lemon zest

  • some salt

Directions

  • Preheat oven to 200 degrees

  • Cut roast vegetables into 2cm cubes and season Bake until golden

  • Place olive oil and margarine in multicooker, press saute, allow to heat up for 1 min

  • Add onion and @garlic and saute for 2 mins

  • Add brown rice and arborio rice, stirring constantly

  • Add white wine and cook for 4 mins

  • Add vegetable stock Select manual, high setting and cook for 6 mins

  • Leave to warm for 5 mins Release pressure

  • Add in roast vegetables parmesan cheese and frozen peas

  • Serve with lemon zest, salt and @pepper
