Instant Pot Basic Risotto
Ingredients
some roast vegetables
some olive oil
some margarine
1 clove onion and @garlic
1 cup brown rice
2 cups arborio rice
1/2 cup white wine
4 cups vegetable stock
1/2 cup parmesan cheese
1/2 cup frozen peas
1 tbsp lemon zest
some salt
Directions
Preheat oven to 200 degrees
Cut roast vegetables into 2cm cubes and season Bake until golden
Place olive oil and margarine in multicooker, press saute, allow to heat up for 1 min
Add onion and @garlic and saute for 2 mins
Add brown rice and arborio rice, stirring constantly
Add white wine and cook for 4 mins
Add vegetable stock Select manual, high setting and cook for 6 mins
Leave to warm for 5 mins Release pressure
Add in roast vegetables parmesan cheese and frozen peas
Serve with lemon zest, salt and @pepper
