Mediterranean Halloumi Bake
Ingredients
1 tbspn olive oil
1 onion
2 cloves garlic
2 zucchini
15 cherry tomatoes
3 tbspns tomato puree
1 tbspn tumeric
1 tbspn cumin
1 tbsp smoked paprika
1 small chilli
some salt
some pepper
180g halloumi
1 handful basil
Directions
Preheat oven to 220 degress
Heat olive oil and saute onion for 2 mins
Add garlic and cook for another min
Add diced zucchini, quartered cherry tomatoes, tomato puree and tumeric, cumin, smoked paprika, chilli, salt and pepper.
Cover with lid and simmer for 20 mins
Add water or passata if the tomatoes and zucchinis do not release enough juice to make a sauce
Cover the dish with the sliced halloumi, place it under the grill until halloumi slice are golden brown.
Sprinkle with fresh basil and enjoy
