Mediterranean Halloumi Bake

Ingredients

  • 1 tbspn olive oil

  • 1 onion

  • 2 cloves garlic

  • 2 zucchini

  • 15 cherry tomatoes

  • 3 tbspns tomato puree

  • 1 tbspn tumeric

  • 1 tbspn cumin

  • 1 tbsp smoked paprika

  • 1 small chilli

  • some salt

  • some pepper

  • 180g halloumi

  • 1 handful basil

Directions

  • Preheat oven to 220 degress

  • Heat olive oil and saute onion for 2 mins

  • Add garlic and cook for another min

  • Add diced zucchini, quartered cherry tomatoes, tomato puree and tumeric, cumin, smoked paprika, chilli, salt and pepper.

  • Cover with lid and simmer for 20 mins

  • Add water or passata if the tomatoes and zucchinis do not release enough juice to make a sauce

  • Cover the dish with the sliced halloumi, place it under the grill until halloumi slice are golden brown.

  • Sprinkle with fresh basil and enjoy
