Pad Thai

Ingredients

  • some rice-stick noodles

  • 2 tbsp oil

  • 2 cloves garlic

  • 2 chillies

  • 200g chicken or pork

  • some chives

  • 2 tbsp fish sauce

  • some lime juice

  • 2 tsp brown sugar

  • 2 eggs (beaten)

  • 115g bean sprouts

  • 115g unsalted peanuts

  • some crispy fried onion

Directions

  • Soak the rice-stick noodles in warm water for 10mins and then drain

  • Stir fry oil, garlic, chillies and chicken or pork for 2-3 min

  • Add the chives and noodles, cover and cook for 2 mins

  • Add fish sauce, lime juice, brown sugar and eggs (beaten)

  • Stir in bean sprouts, unsalted peanuts and serve with crispy fried onion
