Pumpkin and Quinoa Salad
Ingredients
1 cup rice
1 cup quinoa
1/2 pumpkin
some cranberries, @pepitas, @edamame beans
some lettuce
some green goddess dressing
Directions
Preheat oven to 180 degrees
Cook rice and quinoa in pressure cooker for approx 15 mins
Dice pumpkin and season with spices and olive oil
Roast pumpkin in oven for approx 20-30mins until crispy
Combine rice, quinoa, pumpkin, cranberries, @pepitas, @edamame beans, lettuce in salad bowl
Drizzle salad with green goddess dressing
