Pumpkin and Quinoa Salad

Ingredients

  • 1 cup rice

  • 1 cup quinoa

  • 1/2 pumpkin

  • some cranberries, @pepitas, @edamame beans

  • some lettuce

  • some green goddess dressing

Directions

  • Preheat oven to 180 degrees

  • Cook rice and quinoa in pressure cooker for approx 15 mins

  • Dice pumpkin and season with spices and olive oil

  • Roast pumpkin in oven for approx 20-30mins until crispy

  • Combine rice, quinoa, pumpkin, cranberries, @pepitas, @edamame beans, lettuce in salad bowl

  • Drizzle salad with green goddess dressing
