Pumpkin Baked Beans

Ingredients

  • 1/2 butternut pumpkin

  • some olive oil

  • 1 brown onion

  • 2 cloves garlic

  • 1 tsp paprika

  • 1 tsp seeded mustard

  • 1 tsp soy sauce

  • 1 can kidney beans

  • 1 can cannellini beans

  • one loaf turkish bread

  • some feta

  • some spinach

  • some herbs

Directions

  • Preheat oven to 160 degress.

  • Steam butternut pumpkin until soft.

  • Heat olive oil in frying pan over medium heat and cook brown onion for 3-4mins.

  • Blend cooked onion, steamed pumpkin, garlic, paprika, seeded mustard and soy sauce in food processor until smooth.

  • Combime kidney beans and cannellini beans to pumpkin mixture in baking dish.

  • Cover with aluminium foil and bake for 30 mins.

  • Serve with turkish bread and sprinkled with feta, spinach and herbs.
