Pumpkin Gingerbread

Ingredients

  • 400g pumpkin

  • 2 cups SR flour

  • 1/2 cup sugar

  • 2 tsp ground ginger

  • 1 tsp mixed spice

  • 2 eggs

  • 1/2 cup canola oil

  • 1/2 cup milk

Directions

  • Preheat oven to 180 degrees

  • Grease loaf tin

  • Steam peeled pumpkin for 10 mins

  • Mash pumpkin until smooth

  • Combine SR flour , sugar, ground ginger and mixed spice in bowl

  • Whisk eggs, canola oil and milk in jug

  • Add egg mixture to flour

  • Add pumpkin and combined with wooden spoon

  • Bake for 1 hour, until skewer comes out clean

  • Serve with maragine and honey
