Pumpkin Gingerbread
Ingredients
400g pumpkin
2 cups SR flour
1/2 cup sugar
2 tsp ground ginger
1 tsp mixed spice
2 eggs
1/2 cup canola oil
1/2 cup milk
Directions
Preheat oven to 180 degrees
Grease loaf tin
Steam peeled pumpkin for 10 mins
Mash pumpkin until smooth
Combine SR flour , sugar, ground ginger and mixed spice in bowl
Whisk eggs, canola oil and milk in jug
Add egg mixture to flour
Add pumpkin and combined with wooden spoon
Bake for 1 hour, until skewer comes out clean
Serve with maragine and honey
