Slow Cooked Moroccan Lamb Casserole
Ingredients
some Oil
some Lamb shoulder
some onion
2 large garlic
1tsp cinnamon
1 1/2 tsp cumin
1 1/2 coriander seed
1 tsp onion powder
1 tsp salt
some carrot
some potatoes
1 1/2 cups water
2 tbsp lemon juice
4 small ribbons lemon peel
1 tbsp tomato paste
2 bay leaves
some dried figs
1/4 cup slivered almonds
some cous cous
Directions
Preheat slow cooker for 20 mins
Heat Oil in pan and sear diced Lamb shoulder in fry pan until brown
Add lamb to slow cooker
Saute onion and garlic in oil for 2 mins
Add cinnamon
cumin coriander seed onion powder, salt and fry
Boil carrot and potatoes
Add onion, spices, water, lemon juice, lemon peel, tomato paste, bay leaves, dried figs to slow cooker
Cook for 6-8 hours on low
Serve with toasted slivered almonds and cous cous
