Slow Cooked Moroccan Lamb Casserole

Ingredients

  • some Oil

  • some Lamb shoulder

  • some onion

  • 2 large garlic

  • 1tsp cinnamon

  • 1 1/2 tsp cumin

  • 1 1/2 coriander seed

  • 1 tsp onion powder

  • 1 tsp salt

  • some carrot

  • some potatoes

  • 1 1/2 cups water

  • 2 tbsp lemon juice

  • 4 small ribbons lemon peel

  • 1 tbsp tomato paste

  • 2 bay leaves

  • some dried figs

  • 1/4 cup slivered almonds

  • some cous cous

Directions

  • Preheat slow cooker for 20 mins

  • Heat Oil in pan and sear diced Lamb shoulder in fry pan until brown

  • Add lamb to slow cooker

  • Saute onion and garlic in oil for 2 mins

  • Add cinnamon

  • cumin coriander seed onion powder, salt and fry

  • Boil carrot and potatoes

  • Add onion, spices, water, lemon juice, lemon peel, tomato paste, bay leaves, dried figs to slow cooker

  • Cook for 6-8 hours on low

  • Serve with toasted slivered almonds and cous cous
