Spinach and Lentil Stew
Ingredients
some olive oil
1 onion
1 carrot
1 1 celery
1 tbs curry powder
3 cloves garlic
some chilli flakes
2 cups vegetable stock
2 x 400g can diced tomatoes
2 cans lentils
some spinach leaves
some lemon juice
some lebananese bread
Directions
Heat olive oil in frying pan
Cook onion carrot 1 celery until soft
Add curry powder, garlic and chilli flakes, cook until fragnant
Add vegetable stock, diced tomatoes and lentils and bring to boil
Reduce heat and simmer uncovered for 8 minutes
Stir in spinach leaves and lemon juice until spinach has wilted
Serve with lebananese bread
