Spinach and Lentil Stew

Ingredients

  • some olive oil

  • 1 onion

  • 1 carrot

  • 1 1 celery

  • 1 tbs curry powder

  • 3 cloves garlic

  • some chilli flakes

  • 2 cups vegetable stock

  • 2 x 400g can diced tomatoes

  • 2 cans lentils

  • some spinach leaves

  • some lemon juice

  • some lebananese bread

Directions

  • Heat olive oil in frying pan

  • Cook onion carrot 1 celery until soft

  • Add curry powder, garlic and chilli flakes, cook until fragnant

  • Add vegetable stock, diced tomatoes and lentils and bring to boil

  • Reduce heat and simmer uncovered for 8 minutes

  • Stir in spinach leaves and lemon juice until spinach has wilted

  • Serve with lebananese bread
