Sweet Potato Mushroom & Two Bean Cottage Pie
Ingredients
700g sweet potatoes
1 tbs oil
1 onion
200g mushrooms
400g black beans
400g red kidney beans
1 tsp mexican mix
400g diced tomatoes
1 cup water
Directions
Steam sweet potato
Mash sweet potatoes
Heat oil in frying pan, cook onion for 5mins
Add mushrooms and cook for another 5 mins
Stir in black beans and red kidney beans, mexican mix, diced tomatoes and water
Bring to the boil and then reduce heat and simmer for 8 mins
Transfer mushroom and bean mix to baking dish
Top with mashed potato
Grill for 15-20 mins until sweet potato is starting to brown
Serve with steamed green vegetables
