Sweet Potato Salad

Ingredients

  • 1 large sweet potato

  • 1 bag spinach and rockets leaves

  • some pine nutes

  • some balsamic vinegar

  • some honey

  • some feta cheese

  • some avocado

Directions

  • Preheat oven to 180 degrees

  • Cut sweet potato into 2 cubes

  • Season with salt and pepper

  • Roast for 30 mins or until soft

  • Add spinach and rockets leaves and pine nutes to mix

  • Combine balsamic vinegar and honey and drizzle over salad

  • Serve with crumbled feta cheese and avocado
